Just in time for chilly weather, comes a new restaurant promising to warm our bodies and souls with artisan beers, and British pub food like fish-n-chips, shepherd’s pie, and a big, juicy burger topped in beer-cheese.
Plans are for Pub Republic to open in mid-November on Lakeville Highway and South McDowell Road, in the space that previously was Zocalo’s Latin American Grill. A project of business partners Jory Bergman (a former HR specialist turned restaurateur) and Mark Edwards (known for Ghiringhelli Pizzeria Grill & Bar and Finnegan’s in Novato), the idea is a watering hole hangout that’s also family and kid friendly.
On the suds side, we will be able to work our way through a dozen choices on tap, and an extensive array of bottled beers, including Lagunitas Imperial Russian Stout.
To nibble, chef Garrett Sather (formerly Bubba’s of San Anselmo) has put together an ambitious menu that ranges from old-style like New York steak with bread pudding or creamy scalloped potatoes, to what Bergman calls “urban pub,” with a “Wake Up!” burger in black coffee rub and smoked paprika topped in Porter cheddar.
Veggie lovers need not feel left out, either. Choices include a vegan-hummus burger slathered in Green Goddess dressing, grilled Portobello over crispy chickpea cake, and a Brussels sprout taco. But that’s only for those who can resist such temptations as thick-cut bacon mac-n-cheese, Niman Ranch pork chop in fig sauce, and free range crispy boneless half chicken roasted under a brick, paired with Brussels sprouts, smoked bacon and fingerling hash, and finished in deglazed pan sauce with thyme and parsley.
